Hot Dry Noodles - A Tasty Treat from Wuhan!
Hi everyone! My name is Lily and I'm 10 years old. Today I want to tell you all about one of my absolute favorite foods - hot dry noodles from Wuhan! This famous dish comes from the city of Wuhan in central China. Whenever my mom makes it for dinner, I get so excited because it's so yummy and fun to eat. First, let me tell you about all the tasty ingredients that go into making authentic Wuhan hot dry noodles:
Noodles - Of course, you need noodles! The noodles used are thick, chewy Chinese noodles made from wheat flour, water and a tiny bit of alkaline solution to give them that distinctive texture and bite.
Sesame Paste - This thick, nutty sesame paste is a key flavor in the sauce. It's made by grinding up toasted sesame seeds until they turn into a smooth, drippy paste. Yum!
Soy Sauce - You also need some soy sauce to add that savory, umami taste to the sauce. The sauce wouldn't be complete without it.
Vinegar - A splash of vinegar, usually black or red vinegar, gives the sauce a nice tang.
Chili Oil - This spicy, fragrant oil made from fresh chilies and other spices adds a big kick of heat. My dad always lets me add a bit more because I like it extra spicy!
Scallions - You can't have hot dry noodles without tons of fresh, crisp scallion greens sprinkled over the top. They add so much flavor and crunch.
Garlic - What would any good sauce be without garlic? The pungent garlic is cooked into the sauce.
Chicken - Many versions also have shredded chicken breast mixed into the noodles. The chicken gets cooked separately in chicken broth with ginger and green onions.
Nuts and Seeds - Crunchy peanuts, sesame seeds, or fresh cilantro leaves often get sprinkled on as a garnish too. So many textures!
Once you have all those delicious ingredients ready, it's time to start cooking! Here are the steps:
First, boil the noodles until they are nice and chewy. Drain the noodles and let them cool a bit.
In another pan, heat up some oil and fry the garlic until fragrant. Then add the sesame paste, soy sauce, vinegar, and as much chili oil as you want. Mix it all together into a thick, rich sauce.
If using chicken, cook the chicken in chicken broth with ginger, green onions, and spices until cooked through. Shred it once cool.
Now it's assembly time! Put the noodles in a big bowl. Pour the hot sesame sauce all over the top and mix well, coating every strand of noodle.
Next, add in the shredded chicken if you're using it. Finally, garnish with lots of fresh scallion greens and any other toppings like peanuts, sesame seeds or cilantro.
And that's it! The noodles are meant to be eaten right away while piping hot. Slurp up those long, saucy noodles and get delicious sauce all over your face. That's the best way to eat them!
